Ingredients


White Chocolate:

  • 35g sugar
  • 100ml water
  • 100ml Anchor Chef's Classic Whipping Cream
  • 300ml fresh milk
  • 30g white chocolate
  • 1/2 vanilla pod
  • pinch of salt

Dark Chocolate:

  • 75g sugar
  • 85g cacoa powder
  • 100ml water
  • 100ml Anchor Chef's Classic Whipping Cream
  • 300ml fresh milk
  • pinch of salt

Foam:

  • 450ml Anchor Chef's Classic Whipping Cream
  • 15g sugar syrup
Method

White Chocolate:

  • Combine the sugar, vanilla pod seed, and salt in a saucepan. Add boiling water and whisk until smooth. 
  • Bring the mixture to a boil and cook for 2 minutes. Stir in the milk and the Anchor Chef`s Classic Whipping Cream and bring to a simmer.
  •  Pour the mixture on to the white chocolate. Mix well. 

Dark Chocolate:

  • Combine sugar, cacao powder, and salt in a saucepan. Add boiling water and whisk until smooth. 
  • Bring the mixture to a boil and cook for 2 minutes. Stir in the milk and the Anchor Chef`s Classic Whipping Cream and bring to a simmer. Mix well.

Foam:

  • Mix the Anchor Chef`s Classic Whipping Cream and sugar syrup well and pour in the iSi Gourmet Whip
  • Insert the gas canister and shake 14-18 times till a nice piping consistency. Refrigerate.

Assembly:

  • First pour in the white chocolate drink, next the dark chocolate drink.
  • Pipe on a good amount of the foam. 

Decoration:

  • Decorate with some cacao powder and chocolate truffles.
